    It is our most popular and our most decadent cheese. This double-cream beauty, made from our pasteurized cow’s milk is soft-ripened Camembert-style with a silky smooth texture and salty yet sweet buttery flavor. The thin bloomy rind gives way to a rich and exuberant flavor. Each wheel is individually handcrafted, hand-ladled and ripened for two weeks before we hand wrap them for shipping. Green Hill is an eight-time winner at the American Cheese Society Annual Conference.

    Drizzle a little honey over a slightly warm Green Hill wheel and serve with crunchy French bread or arrange on a cheese board with jams, nuts, and crisp apples. This cheese pairs perfectly with a white or sparkling wine or a crisp apple cider. It might take some explaining to convince your dinner guests that this cheese isn’t directly from France, but then, even the most avid French cheese connoisseurs will be fans of our Green Hill cheese.

    A flavored cheese, Heat has a mild, slow burn coupled with smokey tinges that make this decidedly different than any run-of-the-mill "pepperjack" you may have seen in grocery aisles. Real chili peppers including Pasilla and Ancho provide the kick while the chipotle and paprika give Heat its smokiness. This cheese is semi-soft and won't singe your taste buds. We promise.

    For every batch of Heat, we make our own chile paste. When the paste is ready, we mix it into our curds along with other dried chillies and seasonings. Aged for at least 60 days, this cheese goes from milk to wheel form within approximately four hours.
