    Quick Info:
It is our most popular and our most decadent cheese. This double-cream beauty, made from our pasteurized cow’s milk is soft-ripened Camembert-style with a silky smooth texture and salty yet sweet buttery flavor. The thin bloomy rind gives way to a rich and exuberant flavor. Each wheel is individually handcrafted, hand-ladled and ripened for two weeks before we hand wrap them for shipping. Green Hill is an eight-time winner at the American Cheese Society Annual Conference.
    More Info:
Drizzle a little honey over a slightly warm Green Hill wheel and serve with crunchy French bread or arrange on a cheese board with jams, nuts, and crisp apples. This cheese pairs perfectly with a white or sparkling wine or a crisp apple cider. It might take some explaining to convince your dinner guests that this cheese isn’t directly from France, but then, even the most avid French cheese connoisseurs will be fans of our Green Hill cheese.

It is our subtle yet interestingly pungent cheese, which makes it quite versatile. This is a staple for your cheese board. It pairs beautifully with apricots and nuts or with bread and butter pickles. It makes the perfect picnic cheese too! It’s what we use in our pimento cheese and it’s what goes great on your favorite salami sandwich. Serve this cheese anytime of the day on any occasion.
    More Info:
An homage to our hometown, this raw grass-based cow's milk cheese is made in the style of a French mountain Pyreneese Tomme. The higher butterfat milk provides this cheese with smooth, rich, and buttery characteristics. Tomme is subtle and complex with a thin, natural rind that gives way to a semi-firm golden interior. It's finish is tangy and slightly salty. Aged for 60 days, Tomme goes from milk to wheel in about five hours. We don't cook this cheese or press it, giving the cheese distinctive eye holes. We wanted to make a cheese that was very pure -- something that showed the quality of our milk. We were looking for something that we didn’t have to age for long. We needed a table cheese that could be served at the breakfast table in the morning, served on a cheese board, or added to a sandwich. We decided to make a slightly cooked hard cheese following the style native to the Pyrenees Mountains in the southwest of France. There, they let the cream separate from the milk and use the skim milk that is left. We use natural cultures and a gravity press to create our Thomasville Tomme Hard Cheese.

Serve it with jam and crackers for a perfectly paired appetizer, crumble on top of a pile of greens for a satisfying salad, or let its complexity meet the simplicity of a grilled steak and turn your dinner into delicious. Even if you think you are not a blue cheese person, give it a try. We've converted several non-blue cheese fans into the Asher Blue fan club.
    More Info:
One of the few naturally-rinded blue cheeses being made in the U.S. Asher Blue has a dense, creamy paste that keeps your palate on its toes while deep, flowering blue veins hint at a robust finish. But, unlike many blue cheeses, it maintains an unexpected mild finish. Named after the Littles' middle child, this cheese causes just enough charming mischief during our hand piercing process to bear his name.

A flavored cheese, Heat has a mild, slow burn coupled with smokey tinges that make this decidedly different than any run-of-the-mill "pepperjack" you may have seen in grocery aisles.
